Valentine's Day Oatmeal M&M Cookies - Kelly Lynn's Sweets and Treats (1)

Oatmeal chocolate chip cookies all jazzed up and ready for their Valentine’s Day date by adding Valentine’s Day M&M’s and sprinkles. This oatmeal cookie recipe is a favorite of many family and friends. So definitely make this for yourValentine!

Serves: 36 cookies Cooking Time: 10-11 minutes

Ingredients

  • 3/4 cup unsalted butter, room temperature
  • 1 cup light brown sugar, packed
  • 1 cup white granulated sugar
  • 2 eggs, room temperature
  • 2 teaspoons vanilla extract (I used Rodelle Baker's Extract)
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cornstarch
  • 1/4 teaspoon salt
  • pinch of ground nutmeg
  • 2 cups old fashioned oats
  • 1/2 cup quick cooking oats
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup Valentine's Day colored M&M's
  • Valentine's Day colored sprinkles (optional)

Instructions

Preheat oven to 350-degrees and line three cookie sheets with parchment paper. Set aside.

In the bowl of a stand mixer, affixed with the paddle attachment, cream together the butter, brown sugar and white sugar on medium-high speed, until light and fluffy. Mix in the eggs and vanilla extract. Scrape down the sides of the bowl as needed.

Change the mixer speed to low and slowly add in the flour, baking soda, baking powder, cornstarch, salt and nutmeg. Mix in both of the oats and the chocolate chips and M&M's. Mixing until barely combined.

Remove the bowl from the mixer and use a standard sized cookie scoop (approximately 2 tablespoons) to scoop cookie dough balls. Option to roll the tops of the cookies in sprinkles before placing on the prepared cookie sheets.

Bake cookies, one cookie sheet at a time, in 350-degree oven for 11-12 minutes or until the edges of the cookies are light brown. Remove baked cookies from the oven and let rest on the cookie sheet for several minutes before transferring to a wire rack to finish cooling completely.

Notes

Store cookies in an air tight container at room temperature. Cookies stay fresh for several days.
