How to Make Easy Homemade Cheddar Meatloaf in an Oven

When I decided to convert the original crock pot recipe to this Easy Homemade Cheddar Meatloaf oven recipe, I knew I needed to double it from the original recipe. This meatloaf is so good that I knew my family would want it more than one night, and I was right. My picky eater was even asking for this nights after we had already had this meatloaf not once, but twice! That is a major win in this house.

You may notice in the equipment list that I have two large spatulas. There is a reason for this. Like many people, we like meatloaf made with a less lean ground beef. That means there is quite a bit of grease in the baking dish when the meatloaf is done. I cut my meatloaf in half and used large spatulas to put the meatloaf on a plate before cutting up to serve. You still have a juicy and flavorful meatloaf without much excess grease on your plate.

What You Will Need for Easy Homemade Cheddar Meatloaf (Oven Recipe)

Ingredients Needed

  • 2 lb ground beef
  • 1 1/2 cups milk
  • 2 eggs
  • 2 teaspoons salt
  • 2 cups shredded cheddar cheese
  • 1 cup quick cooking oats or crushed saltines
  • 1 tablespoon dried minced onion
  • 1 cup ketchup
  • 3/4 cup brown sugar

Equipment Needed

  • Large mixing bowl
  • Measuring cups
  • Measuring spoon
  • Whisk or fork
  • Stirring spatula
  • 9 x 13 baking dish
  • Meat thermometer
  • Large spatulas
  • Large plate

Time Needed

  • Prep Time: 10 minutes or less to put the meatloaf together, plus however long it takes your oven to preheat to 375 degrees Fahrenheit
  • Cooking Time: 30 to 40 minutes at 375 degrees Fahrenheit, rotating your baking dish 180 degrees halfway through the cooking time if your oven does not cook evenly

Ingredients

  • 1 1/2 cups milk
  • 2 large eggs beaten
  • 2 teaspoons salt
  • 2 cups shredded cheddar cheese
  • 1 cup quick-cooking oats uncooked (or crushed saltines if that is your preference)
  • 1 tablespoon minced dried onion
  • 2 lbs ground beef
  • 1 cup ketchup
  • 3/4 cup brown sugar packed (or brown sugar substitute)

Instructions

  • Preheat your oven to 375 degrees Fahrenheit.

  • Put your beaten eggs, milk and salt in a large bowl and whisk until completely blended.

  • Add your cheese, quick-cooking oats (or crushed crackers), minced dried onions and ground beef to the egg mixture.

  • Mix all of these ingredients together until well blended.

  • Place the meatloaf mixture into your 9×13 baking dish, press it down evenly in the pan and press a line down the length of the meatloaf in the center.

  • In a separate bowl, mix together your ketchup and brown sugar.

  • Pour this over the top of your meatloaf and spread it out evenly with a butter knife or stirring spatula.

  • Bake for 30-40 minutes at 375 degrees Fahrenheit, turning your baking dish halfway through the cooking time if your oven does not cook evenly. Your meatloaf is done when the center reaches at least 165 degrees Fahrenheit.
